Lakonia is an area which is rich in thyme, sage, oregano, heather and other scented plants, many of which are very rare to be found in other parts in Greece. Mount Parnonas, where most of our annual honey yield is collected, is an area full of firs, chestnut trees and arbutuses. Honey production in Lakonia is estimated to about 200 tones. Nearly ¼ of honey production is taken from Oitylos region in Mani.

Honey is the food produced by honey bees from flower nectar or secretions of or on plants, which the bees collect, alter, mix with substances of their own, which.
It is a mixed sort of honey in which sage’s, orange’s, almond’s tree and every spring flower’s flourishment is combined. Usually, when it is open coloured it has a more distinctive and rich flavor, whereas being dark coloured means it has bigger nutrition value because it is richer in trace elements (magnesium, calcium, phosphorus, iron). It is usually crystallized within 1-2 months.
It is considered to be as one of the best honey varieties, combining wide-range flavor taste coverage and low calories’ contention. It is selected from mountainous regions and especially mount Parnonas’ region. Its crystallization takes several months to occur.
Thyme honey is a special kind of honey, known for its intense perfume and great flavor. It is considered to be one of the best honey varieties in terms of quality and is about 10% of Greece’s honey production. Here in Mani we have a huge call for thyme honey. Furthermore, thyme honey is also special for its antiseptic properties and the energy that provides the human functionality with. Its crystallization is estimated to occur within 6-18 months.
Royal jelly is a honey bee secretion that is used in the nutrition of larvae and adult queens. It is secreted from the glands in the hypopharynx of worker bees which are up to 12 days old. It is rich in vitamins (Α, Β1, Β2, Β3, Β5, Β6, Β12, folic acid, C, D, E), trace minerals (sodium, calcium, meganium, magnesium, fluorine, zinc, potassium etc) and amino-acids.
It is no random point that a queen bee’s life is 30 times longer than a worker’s one, while its size is double of that of a worker.
Including royal jelly in our nutrition affects our metabolism, growth and longevity. It enhances physical and mental vitality along with the sexual arousal and fertility. Honeycomb is a least preferred product by the consuming society. Through the years more people seem to be finding out about it and understand that a fresh-built honeycomb in line with honey, underlies the significance and nutrition value of the product itself. Honeycomb is collected during harvest time, we pick the combs that are fully formed in honey and we give them any shape we wish. Beeswax is a different sort of apicultural product. When beekeepers extract the honey, they cut off the wax caps from each honeycomb cell with an uncapping knife or machine. The wax may be clarified from its leftovers, called slumgum, by heating in water. The ideal temperature is 60 Celcius. We then leave it to cool down and turn into solid in order to re-use it in apicultural activities, if needed. Wax’s use is not limited to apiculture, but it can also be helpful in pharmaceutical aspects, where a great number of ointments contain wax. That said, beeswax can relief from burn injuries, abcesses, and pimples. It is been also used in dental medicine because it is rather effective against tooth decay and provides tooth gums with a shield.

It is known as “the bread of the bees”. Pollen is collected from many flowers and is the richest food in vitamins, amino acids, proteins and other important components to our everyday life. A spoonful of pollen can get our daily needs in proteins, vitamins and trace elements covered. An escalating use is required in order for our stomach to get used to it, which means that we start with a minimum amount of pollen dose that is being increased on daily basis.
