You will need 1 tablespoonful of vinegar, 3 tablespoonfuls of olive oil, natural orange juice extracted from 1 orange, 1 tablespoonful of thyme honey, half a pine bag, a few parsley and 2 spoonfuls of mustard.

You stir the ingredients until the sauce turns into fluid and then you may pour it on roast vegetables or on a green salad, such as lettuce.

You will need a chicken weighing about 2 kg, some quince potatoes or small chips, orange juice extracted from 6 oranges, orange slivers, 5 tablespoonfuls of olive oil, salt, pepper, ½ spoonful of cinnamon, 1/3 spoonful of clove and a tablespoonful of thyme honey.

You wash very well the chicken and then dry it up with an absorbent paper towel to remove any track of humidity, and then you put it in the Dutch-oven. Finally you place the potatoes round the chicken, after you have peeled and chopped them. Put the orange juice, slivers, olive oil, cinnamon, salt, pepper and honey in the mixer. After a good stirring pour the mix on the food and bake it for about 1 ½ hour. You may serve it with trimmed parsley.
